Introduction

Chicken and Vegetable Masala

This quick meal with the help of Masala Simmer Sauce will fill you up while tantalizing your taste buds. Filled with fresh vegetables and we use chicken, this can easily be a vegetarian dish. Substitute the protein for tofu or just add a vegetable of your choice.

 3 tbsp Sesame Oil
 6 oz Sweet Potato, cubed
 10 oz Potato, cubed
 16 oz Vegetable Stock
 4 oz Broccoli floret's, fresh
 3 oz Red Bell Pepper, chopped
 3 oz Green Bell Pepper, chopped
 5 oz Green Beans, chopped, 1 inch pieces
 1 Chicken Breast
 6 oz Trader Joe's Masala simmer sauce
 ½ Fresh Lime, Squeezed
 Cilantro leaves, chopped

Preperation
1

You will need 2 saute pans, I use 1 small and 1 large and 2 prep bowls
Bowl #1
Dice peeled Potatoe and Sweet Potatoe to your liking and set aside.
Bowl #2
Chop the ends of the washed green beans and set aside in a bowl
Trim the stems off the Broccoli Florets and set aside
If you like you can chop the broccoli stems and place in bowl as well
Slice bell pepper into strips and place in the bowl
Bowl #3
Slice the chicken breast into strips, salt to taste and place in bowl
Bowl #4 Chop cilantro

Bring 2 tablespoons of Sesame Oil to temp over medium-high heat in large Saute Pan
Lightly fry Bowl #1, the potatoes until they begin to crisp
Add the vegetables from bowl #2 and toss until evenly coated with oil
let cook for 5 minutes mixing frequently
Add 16 oz. of the vegetable stock and bring to a boil, Cover and simmer stirring occasionally, let cook 5 minutes.
Add the Masala sauce and mix well, cover and finish for 10 minutes

Bring 1 tablespoons of Sesame Oil to temp over medium-high heat and add chicken.
Turn occasionally so all sides crisp on the outside, Cook until done

Cut chicken breast cooking in sesame oil

Plating

Place the Vegetable Masala in a bowl, top with chicken
Garnish with chopped cilantro.
